Summer Salad with Courgette Ribbons, Burrata & Toasted Pine Nuts


This salad takes 5 minutes to make and it is everything you need this summer.

If you’re a big burrata fan like I am, then you’re going to love it. It is definitely getting on the list of my favourite’s for this summer!

I saw this salad on @boroughchef instagram feed and had to try it. It turned out incredibly delicious and just perfect for a sunny summer day.

A good burrata doesn’t need much besides salt, freshly cracked pepper and quality olive oil. Add some fresh crunchy zucchini to it, toasted pine nuts, lemon juice for extra freshness and chili flakes for a bit of a punch and this simple salad will make your palate dance! Not sure if that’s a saying but I think you know what I mean 😅


Ingredients

Makes: 2light meals
Time: 5–10 min


100 g Burrata (one medium one)
1/2 medium courgette
1 cup rocket leaves
1 tbsp pine nuts
1 tbsp freshly squeezed lemon juice
2 tbsp extra virgin olive oil
A small pinch of chili flakes
A pinch of Maldon Sea Salt
Freshly cracked black pepper


Instructions

Half your courgette lengthwise, place 1/2 courgette flat side down on a cutting board and using a vegetable peeler start pealing layer after layer of the courgette, creating thin, broad stripes.

Meanwhile, put a small frying pan on medium heat. Throw in 1 tbsp pine nuts and toast them until slightly brown/golden on both sides, about 2-3 min.

Place your courgette ribbons in a big mixing bowl together with 1 cup rocket leaves, 2 tbsp olive oil, 1 tbsp freshly squeezed lemon juice, a small pinch of chili flakes, a pinch of Maldon salt, freshly cracked pepper, and give it a quick toss.

Place on a plate, top with 1 medium burrata (I like tearing mine with hands into smaller bites, but you can also chop it or leave it whole), toasted pine nuts, a little more olive oil, salt & pepper.

P.S. Dear Berliners, you can find Maldon Salt in almost every REWE in Berlin – what’s so special about it is that it consists of thin salt flakes that are crunchy and melt in your mouth! I really love it and recommend it. As for burrata, my favourite ‘easy to get’ one is this one also from REWE – it’s super creamy and not pricy at all!
